SWEET POTATO AND BLACK BEAN MIX

Ingredients

2 medium sweet potatoes

1 red onion 2 red peppers

1 can of organic tinned tomatoes

A carton of organic black beans

1 tsp of cumin

1 tsp of coriander

1 tsp of smoked paprika

A bunch of fresh coriander

1 fresh red chilli Method

Method

1. Chop sweet potatoes into cubes, scatter onto a baking try and sprinkle with cumin, ground coriander and smoked paprika and drizzle 1tsp of coconut oil over potatoes. Bake for 35-40minutes

2. In a pan, fry the onions, fresh coriander stalks, chilli, peppers and other remaining spices.  

3. Cook over a low heat for 15 minutes stirring regularly

4. Add the tinned tomatoes and black beans, simmer for 30minutes (you can add a splash of water to loosen if needed)

5. Stir in the sweet potatoes along with most of the fresh coriander leaves.

6. Serve on its own or with brown rice with a sprinkle of coriander - to make it look pretty :-)
